Within
our brochure you will find a few terms used to describe the beef that
we purchase. All of our beef roasts and steaks are Choice grade and
are wet aged. This means that they are well marbled with fat to produce
great tenderness, juiciness and flavor. Choice grade is widely regarded
as a superior level to the grades that most restaurants and caterers
use. The wet aging process brings the meat to the optimum tenderness
possible. For our barbeques, we have chosen top quality Angus beef hamburgers
and natural casing hot dogs instead of using lower grade meats with
by-products. Our Grade A chicken and pork products are produced by farmers
committed to not using growth hormones or harmful feed products at their
USDA inspected farms. Our chefs use only the freshest vegetables from
New England regional farms whenever possible.
Our environmentally friendly commitment goes beyond the food products
we serve to the disposable tableware that we use. Our “green”
products are made in America from renewable plant products and are designed
to compost faster than regular petroleum based plastic products. See
